Pizza Sauce





Ingredients:

Tomato puree – 2 can
Oil – 3 tbsp
Chopped onion – 2
Garlic paste – 1 tbsp
Red chilli powder – 1 ½ tbsp
Salt – 1 tsp
Black pepper powder – 1 tbsp
Oregano – 1 tbsp
Fresh tomato – 6 chopped

Method:

Take a pan, put oil and sauté onion, then add tomato pure and fry for 1 minute. Then add garlic paste, red chilli powder, salt, black pepper, oregano, and fry for 2 minutes. Then add chopped tomato and let it cook on low heat until its done well. Let it cool down and blend in blender to make smooth sauce. Refrigerate and use on pizza base.

Pizza Twister






Ingredients for dough:

Flour – 2 cup
Yeast – 1 tbsp
Salt – ½ tsp
Sugar – ½ tsp
Mix flour, yeast, salt and sugar, make soft dough with warm water and leave for double in size. Then make 5 balls and roll down, then cook on skillet.

For Filling:

Chicken boneless – 2 breast pieces cut in strips and ponder
White vinegar – 1 tbsp
Crushed black pepper – ½ tsp
Salt – to taste
Soya sauce – 1 tbsp
Chilli sauce – 1 tbsp
Marinate chicken pieces with vinegar, black pepper, salt, Soya sauce and chilli sauce, leave for 10 minutes. Then first dip in batter then roll in dry self raising flour, deep fry in medium hot oil, until golden and crispy.
If for some reason self raising flour not available, then add 1 tsp baking powder in 1 cup of plain flour and mix.

For Batter:

Self raising flour – 4 tbsp
Corn flour – 2 tbsp
Salt – ½ tsp
Chilli sauce – 1 tbsp
Egg – 1
Oil – 1 tbsp
Baking powder – ¼ tsp
Mix flour, corn flour, salt, chilli sauce, egg, oil and baking powder, make thick batter with milk.

Sauce:

Take a pan, add 2 cup tomato paste, 2 tbsp chilli sauce, ½ tsp oregano and ¼ cup water, cook for 5 minutes. Let it cool down.

How to Serve:

Apply sauce on cooked bread, then place fried chicken, then 2 tbsp mozzarella cheese and chopped capsicum, make a roll and serve.

Pizza Dough




Ingredients for pizza dough:

Flour – ½ kg

Yeast – 1 ½ tbsp
Sugar – 1 tsp
Salt – 1 tsp
Method:
Mix yeast and 1 pinch of sugar in warn water. Then make dough with flour, salt and remaining sugar. Leave on warm place for double in size. Then use for pizza with any kind of topping.

Highway Karahi Tikka







Chicken – 2
Cut in 4, 4 pieces and deep fry in hot oil until turn into golden brown and done more then half. Then add 30 green chillies, cover and let it cook on high heat for few minutes, then strain in strainer.
Ginger garlic paste – 2 tbsp
Ginger flakes – 2 tbsp
Lemon juice – 5 tbsp
Salt – to taste
Fresh coriander – 2 tbsp
Special karahi masala – as required

Method:

Take a wok, add 1 cup oil, fried chicken, fried green chillies, ginger garlic paste and salt, and fry well. Then add ½ cup water, cover and cook for 8 to 10 minutes until its done well. Also add ginger flaks. When it’s done, add green chillies, lemon juice, ginger flakes, fresh coriander and special karahi masala. Pour some oil on top to give it a glossy look. Enjoy this yummy tikka karahi with your family.

Special Karahi Masala

Chaat masala – 2 tbsp
Fried cumin seeds – 1 tbsp
Fried dry coriander seeds – 1 tbsp
Dry fenugreek leaves – 1 tsp
Garam masala powder – 1 tsp
Red crushed chilli – 1 tsp
Ground black pepper – 1 tsp
Ground all spices and mix well.

Murg Malai Tikka







Chicken Leg, Boneless Pieces – 12
Garlic ginger Paste – 2 tbsp
White Pepper Powder – 2 tsp
Salt – to taste
Melted Butter for Basting
Clean the chicken leg boneless pieces and cut them into two. Rub with Ginger garlic paste,pepper and salt and keep aside for 20 minutes.

Marinade:

Egg – 1
Grated Cheddar Cheese – 2 tbsp
Chopped Green Chilli – 4
Chopped Coriander Leaves – 1 tbsp
Cream – 180ml
Mace powder – ¼ tsp
Nutmeg powder – ¼ tsp
Corn flour – ½ tbsp

Method:

Make the marinade by blending in all the marinade ingredients and apply on the chicken pieces, leave for 3-4 hours for soften and imbibe the flavours.
Then skewer the chicken pieces a bit apart and roast in a clay oven for 6-7 minutes and then rest the skewer on hanger for a few minutes for extra moisture to drip off.
Baste and roast the kebab again for 7-8 minutes and serve hot with salad and chutney.
You can BBQ or grill.

Chicken Tandoori Tikka Boti



Ingredients:

Chicken boneless – ½ kg cut in cubes
Salt – 1 tsp
Lemon juice – 1 tbsp
Yogurt – 4 tbsp
Ginger garlic paste – 1 tsp
Whole black cumin seeds – ¼ tsp
Crushed black pepper – ¾ tsp
Green chilli paste- 1 tbsp
Cream – 2 tbsp
Butter – 2 tbsp
Cheddar cheese – 3 tbsp
Egg white – 1
Garam masala powder – 1 tsp
Method:
Mix all ingredients and leave for 15 minutes. Skew on skewers and place in greased pan. Bake on preheated oven on 180 degree centigrade for 20 to 25 minutes.



BBQ Pan Pizz



Hot BBQ Pan Pizza

Ingredients for topping:

Boneless chicken – 250g
Red chilli powder – 1 tsp
Tikka masala or BBQ masala – 1 ½ tbsp
Garlic ginger paste – 1 tsp
Lemon juice – 1 tbsp
Oil – 1 tbsp
Salt – to taste
Capsicum, tomato, onion, mushrooms and cheese – as required

Method:

Marinate chicken pieces with salt, lemon juice, ginger garlic paste, BBQ masala and chilli powder, mix and leave for few minutes. Then heat up oil in pan and cook chicken on high flame. When done, give smoke of charcoal for BBQ effect. I taught you pizza dough and pizza sauce many times.

Preparation for pizza:

Take a frying pan, put on cooker and heat it up for 5 minutes, now roll pizza dough and put in hot pan, when one side is cook, turn the side and remove from the cooker. Then apply pizza sauceon cooked part, then chicken pieces, then capsicum, then tomato, then onion, then mushrooms, then oregano and then spread cheese. Now put frying pan on cooker with glass lid or hot skilletand cook on low heat until cheese melts.

For Pizza dough: Instant Yeast– 1 tsp
Flour – 3 cup
Salt – ¾ tsp
Sugar – 1 tsp
Method:
First of all put yeast in 4 tbsp warm water and make frothy, then mix all dry ingredients and then mix yeast and make a dough with warm water, put aside until it has doubled in size.

Pizza Sauce:

Onion – 1 medium
Garlic – 1 clove
Oil – 3 tsp
Tomatoes – 5
Red crushed chilli – ½ tsp
Salt – as taste
Tomato ketchup – 2 tbsp
Oregano – ¼ tsp
Method:
Take a pan, put oil and heat it up and put thinly chopped onion and garlic and fry until soft, then put chopped tomatoes, red crushed chilli, salt , tomato ketchup and oregano and mix well and let it cook till tomato mix well and become in tomato sauce form, if you need water, put a bit of water and cook until done, when done apply on pizza base.
For Pizza topping:
Chicken – 300g
Oil – 2 tbsp
Garlic – 1 clove
Lemon juice – 2 tbsp
Salt – as taste
Mushrooms – as you like
Red chilli powder – 2 tsp
Mozzarella cheese – as you need
Oregano – ¼ tsp
Pizza sauce – as you need
Onion – 1
Capsicum – 1
Red crushed chilli – ½ tsp
Method:
Take a pan, put oil and heat it up, then put chicken and garlic and fry till chicken becomes in white colour, then put lemon juice and salt and mix well, when water is dry, put mushrooms and fry for 1 min and take it off the cooker, let it cool, then put cheese, red chilli powder and oreganoand mix well.
On a floured surface, roll out dough and place on a greased sheet pan. Shape to fill the sheet pan, spread pizza sauce evenly over pizza dough. Sprinkle mozzarella, chicken, onions,capsicum, cheese, and red crushed chilli on top. Bake for 12 minutes or until cheese bubbles in preheated oven 240C, 490F, and Gas mark 9.
